Crispy Pork med Chipotlemajo
INGREDIENTS (4 PORTIONS)
  • 600 g pork loin in slices approx. 1 cm thick
  • 3 tbsp mayonnaise
  • 1 tbsp dijon mustard
  • 1 ½ tsp salt
  • black pepper
  • 300 ml mayonnaise
  • 50 ml chipotle in adobo sauce
  • 1 tbsp lemon juice, freshly squeezed
  • 100 ml cornflour
  • 400 ml panko breadcrumbs
  • oil for frying
  • 4 bread rolls

CRISPY PORK WITH CHIPOTLE MAYO

INSTRUCTIONS
  • Mix 3 tbsp mayonnaise with the dijon mustard, salt and black pepper in a bowl. Add the sliced pork loin and leave to marinate for around 30 minutes.
  • Meanwhile, mix together the rest of the mayonnaise and the chipotle, then add lemon juice, salt and pepper to taste.
  • Combine the flour and panko, then turn the pork loin slices in the panko mixture until fully coated. Place on a rack until ready to cook.
  • Heat a good amount of oil in a frying pan with a high rim and fry the meat until golden brown on both sides.
  • Serve in toasted buns, for example with mayonnaise, gherkins and pickled onion.
