INGREDIENTS (4 PORTIONS)
- 600 g pork loin in slices approx. 1 cm thick
- 3 tbsp mayonnaise
- 1 tbsp dijon mustard
- 1 ½ tsp salt
- black pepper
- 300 ml mayonnaise
- 50 ml chipotle in adobo sauce
- 1 tbsp lemon juice, freshly squeezed
- 100 ml cornflour
- 400 ml panko breadcrumbs
- oil for frying
- 4 bread rolls
CRISPY PORK WITH CHIPOTLE MAYO

INSTRUCTIONS
- Mix 3 tbsp mayonnaise with the dijon mustard, salt and black pepper in a bowl. Add the sliced pork loin and leave to marinate for around 30 minutes.
- Meanwhile, mix together the rest of the mayonnaise and the chipotle, then add lemon juice, salt and pepper to taste.
- Combine the flour and panko, then turn the pork loin slices in the panko mixture until fully coated. Place on a rack until ready to cook.
- Heat a good amount of oil in a frying pan with a high rim and fry the meat until golden brown on both sides.
- Serve in toasted buns, for example with mayonnaise, gherkins and pickled onion.
