INGREDIENTS (4 PORTIONS)
- 500 g minute steak
- 2 tbsp lime juice
- 1 tsp oregano, dried
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp chilli flakes
- 1 garlic clove, finely chopped
- oil for frying
- salt
- pepper
- 1 onion, sliced
- 3 peppers, different colours, sliced
FAJITAS WITH ALL THE TRIMMINGS

plus marinating time for the meat

Instructions:
- Mix the lime juice with the oregano, cumin, paprika, chilli flakes and garlic, then toss the minute steaks in the mixture and leave to marinade for at least 30 minutes.
- Heat a little oil in a pan and fry the steaks quickly on both sides, then lift out and place on a plate.
- Heat up the pan again until smoking and add the onion and peppers. Stir-fry for 1-2 minutes.
- Cut the steak into strips and add to the pan of vegetables. Season and serve piping hot with a range of accompaniments.
