Fläsk Satayspett m jordnötssås och syrad gurka
INGREDIENTS (4 PORTIONS)
  • Satay skewers:

    • 500 g pork loin, thinly sliced
    • 150 ml coconut milk
    • 2 tbsp curry powder
    • 1 tsp salt
    • 2 tsp sugar

     

  • Peanut sauce

    • 200 ml coconut milk
    • 1 tbsp Thai red curry paste
    • 2 tbsp fish sauce
    • 3 tbsp peanut butter
    • 3 tbsp sugar
    • 1 tbsp white wine vinegar

     

  • Pickled cucumber

    • 1 cucumber, sliced
    • 1 mild green chilli, sliced
    • 2-3 shallots, sliced
    • 100 ml sugar
    • 100 ml white wine vinegar
    • 100 ml water

PORK SATAY SKEWERS WITH PEANUT SAUCE AND PICKLED CUCUMBER

INSTRUCTIONS


Satay skewers

  • Combine the coconut milk with the curry powder, sugar and salt, coat the pork strips and marinate for 20 minutes.
  • Thread the strips onto skewers.
  • Grill/fry until cooked to your liking and serve with the peanut sauce and cucumber.


Peanut sauce

  • Heat up the coconut milk, stir in the curry paste until it dissolves, and then simmer until the oil releases.
  • Add the peanut butter and the rest of the ingredients, then season to taste.


Pickled cucumber

  • Combine all the ingredients and leave to stand for 30 minutes, stirring occasionally.
