• 3 slices white bread, crusts removed
  • 1 onion, finely grated
  • 1 egg
  • 1 bunch parsley, chopped
  • 500 g mixed mince
  • 1-2 tsp salt
  • pepper, to taste
  • oil for frying

  • Dip the slices of bread in water for around 30 seconds, remove and squeeze out the excess water. Place in a bowl together with the onion, egg and parsley.
  • Mix the ingredients well, add the mince and continue mixing, season with salt and pepper.
  • Work the mixture for around 5 minutes, until it becomes elastic, then leave it to rest in the fridge for around 30 minutes, covered with cling film.
  • Take out the mince mixture and shape it into kofte with damp hands, place on a plate and allow to rest for 10 minutes.
  • Add oil to a pan and fry the kofte until golden brown.
  • Serve with freshly cooked bulgur wheat, onion salad, lemon wedges and perhaps little pitas on the side.
