INGREDIENTS (4 PORTIONS)
- 3 slices white bread, crusts removed
- 1 onion, finely grated
- 1 egg
- 1 bunch parsley, chopped
- 500 g mixed mince
- 1-2 tsp salt
- pepper, to taste
- oil for frying
QUICK MIXED MINCE KOFTE

INSTRUCTIONS
- Dip the slices of bread in water for around 30 seconds, remove and squeeze out the excess water. Place in a bowl together with the onion, egg and parsley.
- Mix the ingredients well, add the mince and continue mixing, season with salt and pepper.
- Work the mixture for around 5 minutes, until it becomes elastic, then leave it to rest in the fridge for around 30 minutes, covered with cling film.
- Take out the mince mixture and shape it into kofte with damp hands, place on a plate and allow to rest for 10 minutes.
- Add oil to a pan and fry the kofte until golden brown.
- Serve with freshly cooked bulgur wheat, onion salad, lemon wedges and perhaps little pitas on the side.
